Description
Our rare-breed Tamworth pigs are grown on a diet of foraged acorns, waste apples and wheat grown next door. They spend their days digging and grazing pasture and rooting and tooting in the woods, only coming into the barn if it gets too wet to find a dry bed! Free from GM based soy and medicines. They have a natural layer of creamy fat which makes the best crackling!
Bring the loin up to room temperature, dry the skin and rub with salt. Then sear in a very hot oven for 10-15 minutes before lowering the temperature to 160C, and roast for a further 1 hour 30 minutes.
Make sure it’s rested for 20-30 minutes before carving.
